Ceviche Tostadas
Ceviche tostadas are a popular and delicious dish in Mexican and Latin American cuisine. They typically consist of small, crispy corn tortillas (tostadas) topped with ceviche, a dish made from fresh raw fish or seafood that is marinated in citrus juices like lime or lemon, mixed with various vegetables and seasonings. The acidity of the citrus juices effectively "cooks" the fish or seafood, giving it a tender texture and a bright, refreshing flavor.
Here's a basic recipe for making ceviche tostadas:
Ingredients:
For the ceviche:
- Fresh fish or seafood (such as shrimp, white fish, or scallops), diced into small pieces
- Freshly squeezed lime and/or lemon juice
- Red onion, finely chopped
- Fresh tomatoes, diced
- Cilantro, chopped
- Jalapeno or serrano pepper, finely chopped (adjust amount based on your desired level of spiciness)
- Salt and pepper, to taste
- Tostada shells (premade or homemade by frying or baking corn tortillas until crispy)
- Avocado slices
- Lime wedges
- Additional cilantro for garnish
- Start by preparing the ceviche mixture. In a mixing bowl, combine the diced fish or seafood with enough freshly squeezed lime and/or lemon juice to completely cover the seafood. The acid from the citrus juice will "cook" the seafood. Allow it to marinate for about 15-30 minutes, or until the seafood turns opaque and firm.
- Once the seafood is marinated, drain off the excess citrus juice.
- Add the finely chopped red onion, diced tomatoes, chopped cilantro, and chopped jalapeno or serrano pepper to the seafood. Mix everything together gently.
- Season the ceviche mixture with salt and pepper to taste. Adjust the seasonings as needed.
- To assemble the ceviche tostadas, place a spoonful of the ceviche mixture onto each tostada shell.
- Top the ceviche with slices of avocado for creaminess and extra flavor.
- Garnish the tostadas with additional chopped cilantro and serve with lime wedges on the side.
- Enjoy the ceviche tostadas immediately while they are fresh and the flavors are vibrant.
